It looks tasty! In Japan, It's hard to find chicory at ordinary store though. I'll try chinese cabbage instead of chicory for the recipe. - I wonder it's OK or not???

An other idea. You can change this recipe by replacing the slices of cooked ham with slices of smoked salmon. It's delicious too. In this case it's recommended to reduce the quantity of salt.

In winter, it's a recipe we cook often but we supercede grated cheese by potatoe starch. Gorgeous and the best of all, we have our own chicories in the cellar.

I knew they are very good at making beer... but this dish is just gorgeous.

It looks very delicious mainly when it's served with mashed potatoes, but I want to know if its taste changes a lot if we replace ham with beef or the meat of sheep because, as you know, ham is prohibited in our religion. Thanks a lot for making us learn more about WORLD CUISINE!
Jiri, Czech Republic

This morning national TV in Italy had a programme on Chicory (the bordeaux coloured one)mostly grown in the North-Eastern regions. Besides being very versatile in recipes apparently Chicory is rich in iron... so go ahead!

Chicory is a typical Belgium vegetable. It is discovered by a gardener in the basements of the king's palace, so I think it is a typical Belgium recipe.
Sami, France
U can replace chicory with any other veg e.g.Broccoli, leeks, etc., and in France it's called gratin
Su-yeon, Korea

Thierry, France
I know this recipe and I enjoy it. But I'm surprised to learn it's a Belgian recipe. In north of France, it's an usual dish too, I think.Furthermore you use ingredients as gruyere cheese and parmesan which are respectively French and Italian cheeses. So we can say it's now an European recipe. And for this reason, It's a still more enjoyable recipe !
Susana
