This is a raised pastry filled with cocoa. Its Hungarian name is: “kakaós csiga“. I will try to translate: cocoa snail - this is a word by word translation. It is my son’s favourite pastry and he eats it with milk. I wish you could smell the aroma of freshly baked cocoa snails!

The finished dish
Ingredients
- 600 g flour
- 2 egg yolks
- 3 g yeast
- a pinch of salt
- 2 rounded tablespoons of sugar
- 2 tablespoons oil
- milk as required – about 500 ml
For the filling:
- Butter
- Sugar
- Cocoa
Instructions
- In small bowl, dissolve yeast in slightly warm milk with 1 teaspoon of the sugar. Let stand 5-8 minutes.
- Combine the flour, remaining sugar and salt.
- Add the yeast mixture, oil and egg yolks.
- Mix together lightly and knead it until smooth.
- Cover with a cloth and leave to rise.
- When it has risen put it on the table and roll it out.
- Spread some butter on the dough and sprinkle with sugar and instant cocoa powder.
- Roll the dough with the filling inside so that you get a long roll, then cut in to slices.
- Put the slices on to a well-greased baking tin, leave it to rise again for about 15 minutes, then bake the snails in preheated 200 degree oven for about 15-20 minutes until snails get a nice golden brown colour.
The pastry is ready!!! Hurray!! Yummy! Enjoy!

Hi everyone! Many thanks for your kind messages. Words cannot express how much I am enjoying the comments from all over the world. I am so glad you like cocoa snails and some of you have already tried. Wow! Dear Wafaa, Morocco – add sugar and cocoa to taste. However my son would advise: the more, the better. :) If you look back to Open blog January 2008 you will find there photos, a little guide, to follow the recipe. Thanks to everyone once again and take care!

This is very much like a version using currants and cinnamon instead of cocoa which I learned about from an American friend. It is a great recipe -- the only problem is that the snails vanish so quickly that you then have to start again!

Yeast cakes are tasty and healthy. Snails can have another fillings: jam, poppy (mass), cottage cheese, hard cheese.

It's really delicious and tender. But I've got to add more about one and a half cup of flour because it's too sticky for this recipe. Or you can reduce some milk.
