I live in Toru艅, a beautiful city famous for a brilliant astronomer, Nicolaus Copernicus. Toru艅 is the biggest city in Kujawy region of Poland. You can eat in our restaurants Kujawian herring, they are really delicious.

The finished dish
Ingredients
- 500gr herring fillets
- 200ml milk
- 300gr apples (2 apples)
- 2 tablespoons oil
- A little dried marjoram
- Some sugar
- The juice of one lemon
- The peel of one lemon
- Paprika
- 2 tablespoons tomato puree
Instructions
- Soak the fillets in milk for two hours.
- Peel and slice the apples.
- Squeeze a little lemon juice over the apple slices (this stops them turning brown).
- Put the oil (two tablespoons) in a frying pan. Fry the sliced apples with the marjoram, lemon peel and lemon juice.
- Add a pinch of salt, pepper and paprika.
- Mix all together and stew the apples for some minutes, then add two tablespoons of tomato puree and a little sugar.
- Let the apple mixture cool down.
- Cut each fillet in two, layer up these pieces in a serving dish. Cover them with fried apple mixture.
- Put the dish into the fridge for twenty-four hours. Before serving, garnish the dish with parsley, lemon and olives.

Anastasia, you shouldn't fry herring fillets, they must be fresh.Marcin, it isn't hot, it is quite mild.I'm sure you can prepare every type of fish in this way (but use fried fish). Preparing this dish takes not much time(about one hour).Fish or herrings cannot make you fat, it is healthy food.Thanks for comments and warm words.I am glad to read all of them (especially from my countrymen).

Thank you Halina, I heard and read a lot about Poland, from my friends who have visited it, about its best shopping street "novy shviet" "the new world" in Warsow but I did'nt hear a lot about the polish cuisine. Hi Halina, I have been trying to cook some exotic dishes of late though I am one of the worst in the job. Your recipe gives me some sort of inspiration to step into the kitchen.
