Browned butter and chocolate cookies
225g unsalted butter
250g light brown sugar
100g caster sugar
1 tsp vanilla extract
2 eggs
1 egg yolk
350g plain flour
3/4 tsp baking powder
3/4 tsp baking soda
200g dark chocolate chips
Sea salt
Place the butter into a pan. Cook this on a medium heat until a foam appears on the top and small brown speckles appear in the butter at the bottom of the pan.
Pour the butter into a bowl and let it cool for 5 minutes.
Add the two types of sugar, the vanilla essence and stir.
Whisk in the 2 eggs and the egg yolk until thoroughly combined.
In another bowl add the flour, baking powder and baking soda with a pinch of salt. Stir.
Add the wet ingredients to the dry and stir till well incorporated.
Finally stir in the chocolate chips.
Portion out the dough using an ice cream scoop leaving room between them. Sprinkle sea salt over each.
Bake at 170C fan for 16-18 minutes.
