After starting his career working at a five-star hotel in Barbados, Jason moved to the UK in 2009, where he ran Espelette, which held 3 rosettes. Training under Helene Darroze as a sous chef at the then 2 Michelin star restaurant in the Connaught Hotel in Mayfair, he refined his classical French techniques, finding innovative ways to blend them with the Caribbean flavours of his home.

Since then, Jason has worked as a chef director for the Culinary Caribbean Collective and set up as culinary director, The Future Plate, both as a way to promote Caribbean cuisine and give a support emerging Caribbean chefs.

Over the past two years, he has hosted residencies and pop-ups at different establishments in the UK and back home, but his ultimate goal is to open a permanent restaurant, and gain the first ever Michelin Star for Caribbean food. Jason has recently opened Flava Pepper in Brixton, which serves authentic Caribbean cuisine.

Jason has crafted a menu that seamlessly fuses the vibrant flavours of the Caribbean with his refined culinary techniques, delivering a bold and distinctive take on modern Caribbean cuisine.
