Classically trained chef, James, has had a number of successful culinary ventures over the years, and now runs informal fine dining restaurant, 'The Oak' at Curthwaite, Cumbria.

At the age of 14, James started working in hotels in Cumbria. It was through this that he gained an appreciation and understanding of the importance of local ingredients - an ideology that is still at the heart of his cooking.
James’s career started off strong working in some of the best country hotels in the North West, which led him to a job at 'The Connaught' in London. James’s previous restaurant, 'The Lounge on the Green', was awarded two AA rosettes, and was recognised in the Michelin guide.
His style of cooking is modern British with a culinary flair. James’s commitment to seasonal Cumbrian produce will always be at the heart of his cooking and this is reflected in his competition menu.
