Thom started his culinary career very early, becoming head chef at a Latin American restaurant at just 18, a role he held for six years. He left the industry for ten years in 2009, to then be reunited with his love of cooking by taking pictures of his dinner at home and garnering recognition across the internet. His food caught so much attention that he was awarded TSC 2021 Social Media Influencer of the Year.
In 2020, he finally opened his own restaurant, The Flintlock at Cheddleton. The fine dining menu focuses on seasonal and local ingredients to create delicious, beautifully presented dishes. Since its opening, the restaurant has been awarded 3 AA rosettes and in 2023 was included into the Michelin Guide. In 2024 he opened his second restaurant Après, which focuses on tasting menus in a small intimate setting.
For the competition, Thom has crafted a menu inspired by iconic figures such as J.R.R. Tolkien and William Shakespeare, using his creative flair while staying true to his bold, refined style of cooking.
