Cooking with Mother: Wicked Chocolate Brownies
Line a 12'' x 8'' cake tin (inch deep) - with tin foil or non-stick parchment
Pre-heat the oven to 180 degrees - cooking time 45 mins to an hour but check part the way through.
You'll need....
275g soft baking margarine
375g caster sugar
4 large eggs
1tsp baking power
75g cocoa powder
100g plain flour
Put all the ingredients together in the bowl and start mixing...
Approx. 30sec in a food processor - you're aiming for a creamy consistency that's silky smooth and increased in volume a bit.
Once you've mixed it up you can also add plain chocolate bits / nuts in the mixture.
Then pour the mixture into the tray - push it into the corners with a spatula. Make sure your tray's quite deep.
Now it's ready to go into the oven….
When it's ready, it won't be spongy like a sponge cake but you can test it in the same way you'd test sponge…with a skewer. Put the skewer in the brownie and if it comes out free of mixture then it's done.
