Turn the oven on – 180 degrees

You’ll need…

6oz/175g of margarine

6oz caster sugar

8oz/230g of self-raising flour

1 rounded teaspoon of baking powder

3 large eggs

Dash of vanilla essence (optional)

Ìý

Put sugar and margarine together in a mixing bowl – add self-raising flour and baking powder.

Add eggs and vanilla essence (latter’s optional).

Beat the ingredients until the mixture’s fluffy – smooth and yellowy.

Put small cake cases into tray and then spoon mixture into the cases. Fill the each case approx. 2/3 full.

Once you’ve filled the cases, put the tray in the oven.

Bake cakes until they’ve risen, are light brown and if you press the top of the cake it bounces back up. It’ll take approx. 15-20 mins. You might have to turn the tray half way through if they’re browning more on one side.

Once they’re done – either enjoy them as they are or top with icing (icing sugar and water mixed).
