Parathas Dough
Ingredients
- 200g plain flour
- Pinch salt
- 75ml lukewarm water
- 1 teaspoon oil
Method
Mix the flour and salt. Make a well and add the oil and water. Mix into a dough and knead for 5-8 minutes.
Cover with a tea towel and leave for an hour.
Mince Beef Filling
Ingredients
- 250g good quality mince beef
- 1 tablespoon cooking oil
- 1 red onion, finely chopped
- 1 clove garlic, minced
- 1 teaspoon minced root ginger
- 1 teaspoon Garam masala
- Pinch paprika
- Salt to taste
Method
Heat the oil until hot in a frying pan and add the mince. Seal well until coloured and add the onions and garlic. Cook for a minute then add the remaining ingredients. Simmer for about 15 minutes and check the seasoning. Cool.
Divide the dough into 8 pieces and roll into smooth pancakes - around 3mm thickness.
Divide the mince mixture into 8 portions and sprinkle each portion of mince onto the middle of each pancake. Flour your hands and fold up the pancake. Then roll out the pancake back to 3mm thickness.
Place a frying pan over medium heat. Place paratha on hot pan. When bubbles appear, flip over - about 1 minute each side.
Brush with oil and crisp on both sides.
Tamarind, Apple and Ginger Chutney
Ingredients
- 1 cooking Apple, peeled, cored and chopped
- 100ml tamarind paste
- 1 teaspoon black onion seeds
- 1 tablespoon cooking oil
- 25g grated ginger
- 1 teaspoon green chilli, optional
- 100g brown sugar.
Method
Toast the seeds in a hot pan and remove, to a dish.
Cook the ginger and chilli gently in the oil and add the apples, tamarind, sugar and onion seeds. Simmer until soft - about 20 minutes then blend.
