Aromatic Shin of Beef with Udon Noodles and Mushrooms
Aromatic Shin of Beef with Udon Noodles and Mushrooms

750g bone in shin of beef
1 tablespoon oil
2 onions, peeled and chopped
50g root ginger grated
2 cloves garlic
75ml light soy sauce
100ml white wine
1 star anise
1 tablespoon brown sugar
2 tablespoons vinegar
250ml water
Heat the oil in a pan and when smoking seal off the beef. Transfer the beef to a casserole and add the onions, garlic and ginger to the pan. Cook until golden and add the soy, wine, star anise, sugar and vinegar. Simmer for a minute, add the water and pour over the shin. Cover with a lid and cook in a160oc oven for about 2 hours or until fork tender.
Remove the star anise from the juices and rest the beef for 10 minutes. Shred the beef and set aside
1 x 250g pack udon noodles
1 head broccoli, cut into florets through the stalk
200g mushrooms, sliced
6 finely sliced scallions
2 tablespoons oil
Bring a pan of salted water to the boil and add the noodles and broccoli. Cook for 5 minutes and drain.
Heat the oil in a large wok or pan and when smoking add the mushrooms. When golden add the beef and juices and chopped scallions. Mix in the noodles and broccoli, toss well and serve.
