Champ Potato Bread
Ingredients:
Potato Bread
4 medium potatoes peeled and boiled
60g butter (melted)
90g self raising flour
2 spring onions finely sliced
Extra flour for dusting
If you have leftover champ:
Add approx. 1/3 of its weight in flour
There should already be butter and spring onion in it from making it into champ previously
Method:
1. In a bowl mash the potatoes or put them in the ricer. Then add in the melted butter and flour and spring onions till a light dough has formed. (If you have leftover champ then just add 1/3 of it’s weight in flour).
2. On a well-floured surface, knead the dough lightly. It will be sticky, divide into 4 pieces, dust again and with a rolling pin flatten into a circle of about 5mm thickness. You can cut into quarters with a floured knife or leave as a large circle.
3. Heat up a frying pan and sprinkle some flour on it, each potato bread takes roughly about 3 min each side (or till brown on each side). Serve straight away buttered or with a big fry!
