Slow cooker red cabbage
This super hands-off version of the classic festive side dish sees red cabbage, apple and vinegar simply tossed together and left for a slow cooker to work its magic on.

Ingredients
- 1 small red cabbage (800g/1lb 12oz), core removed and shredded
- 1 large red onion, finely sliced
- 3 Braeburn apples, peeled and sliced into 1 cm slices
- 1 star anise
- 200ml/7fl oz vegetable stock
- 3 tbsp cider vinegar
- 3 tbsp soft brown sugar
- 30g/1oz butter, cubed
Method
Toss all of the ingredients together in the bowl of a slow cooker and cover with the lid. Season with salt and pepper and cook on high for 5 hours, until the vegetables are tender.
