Danny Gill goes to great lengths to maximise the taste of his cucumber consomme, while Daniel Smith follows a risky strategy, adding a cheese custard to his lobster dish and making a risotto without rice.
Andrew Scott is cooking with crab, but is forced to scrap one of the elements of the dish, which upsets all his timings.
