Baharat recipes
An all-purpose spice blend used in Middle Eastern cuisine, baharat gives food a smoky, sweet flavour. The blend varies from region to region, but always includes black peppercorns. It typically also includes a blend of some of these spices: cardamom, coriander, cloves, allspice, cinnamon, paprika, nutmeg and cumin. It is easy to make at home or can be purchased from Middle Eastern stores and some supermarkets.

Note: If the baharat spice mix is unavailable, make your own blend of black pepper, paprika, ground cumin, ground coriander, freshly grated nutmeg and ground cinnamon and keep the unused spice blend in an airtight jar.
