Coconut and mango sandwich biscuits

- 50g sugar
- 100g butter
- 145g plain flour
- 50g desiccated coconut
- 30ml water
- 25g honey
- 4tbsp mango pur茅e
- 4 tbsp icing sugar
- 160g mascarpone cheese

Make sure you have clean hands, a clean work surface and a grown-up to hand to help you with the oven.
How to Make

First, you'll need to preheat your oven to听180 潞C.
Beat the butter and sugar until pale and fluffy.
Add the flour and desiccated coconut and mix to combine.
Add the water and knead gently until a dough forms.
Next:
Roll the dough out so it鈥檚 the thickness of a 拢1 coin.
Cut out 12-14 hearts.
Place them onto a lined baking tray and bake in your preheated oven for 8 minutes.
Once baked, leave to cool before filling.
Next:
Whip the Mascarpone cheese until it鈥檚 loosened up, then add the mango pur茅e and honey and the icing sugar and mix to combine.
Lace the filling in the fridge to settle for 15 minutes.

Once set pipe or spoon the filling onto half the biscuits.
Then place the remaining biscuits on top.
Drizzle with more curd and a sprinkle of desiccated coconut.
