Activities: Make Your Your Own Victorian Wassail Punch
The wassail punch was traditionally served to carolling groups after their singing was done. They'd be invited into the Victorian home to warm themselves and drink from the wassail bowl. The recipes varied from family to family, but the most important element was that it be hot to get rid of the winter chill.

6 small apples, washed, cores removed
1 litre/1 pint 15¼fl oz beer or cider
2 cinnamon sticks, crushed using a mortar and pestle
2 pinches ground cloves
freshly grated nutmeg, to taste
1 lemon, sliced
To sweeten the wassail punch, add 500g/1lb 2oz of sugar to the beer or cider before heating it.
Serves 4-6 people
Preheat the oven to 190C/375F/Gas 5.
Score each apple around the middle using a sharp knife.
Place the apples into an ovenproof dish and roast in the oven for 45-50 minutes, or until the apples have softened and the skins are beginning to split.
Meanwhile, heat the beer or cider in a saucepan over a low heat. Add the spices, stir well, and continue to heat through until the surface of the liquid starts to foam.
Add the lemon slices and roasted apples, then serve whilst hot.

I think all of this is brilliant, it brings back the true traditions of christmas and is such a nice change to the normal commercial hype we all normally have to endure over christmas!

Two amazing programmes, both over the year and the Christmas episodes. Almost everything the team undertook I remember from my childhood with grandparents and on the farms around the village of Cranford where I lived as a child during and after WWII - Including getting chillblanes(spelling!!). I can still remember preparing for the harvest festivals, the build up to Christmas, not to mention food preparation - ALL on a Black Range Stove. Thanks for the memories - more please. PS Have taken the recipes down but need the one for the Mixed Meat Pie. Thanks

Correction to my comments of 29th dec @ 5.19pm. The Mixed Meat was in fact ALL GAME as the main ingredients. Any chance of the recipe pleeeeease.

I have the same question as Mike. Is there any change to receve the recipe of the mixed meat? I remember the hen, the stud and the quail. but I can't remember the fourth bird. Please?

Thank you for all your comments regarding the mixed meat pie. The idea for the pie came from Ivan Day’s historic food website, where you will find several pie recipes. We don’t have a recipe for the pie made in the programme as such, but you basically just de-bone all the birds and lay them in pastry in size order, then lay strips of bacon across the top.
