Steamed Rice with Chinese Sausage and Steamed Pork in Black Bean SauceSteamed Rice with Chinese SausageServes 4 Ingredients 300 gms Basmati rice 550 mls of water Chinese pork sausages cut into slivers diagonally.听 The sausages are available in oriental supermarkets.听 You can get a selection - pork, chicken, pork and chicken or pork and liver. Method Wash the rice.听 Put rice into the microwave rice cooker and cover with water.听 Microwave for 8 minutes in a 750kw microwave oven.听 Add the sausages and mix into听the rice taking care not to break the rice grains.听 Just a couple of stirs with a spoon is enough.听 Put back to microwave for a further 2 minutes.听 Leave to stand for 10 minutes.听 听 Steamed Pork with Black Bean Sauce Ingredients 听 500 grms pork rashers diced 2 tbspns听preserved black beans in ginger 1 tbspn garlic - chopped 1 tbspn ginger - chopped听 1 tbspn cornflour 2 tbspns water 1 choppedgreen chilli (optional) 1 tbspn light soy sauce Salt to taste Half tspn听sugar 1 tspn sesame oil Crushed black peppers to taste Coriander leave for garnish听 Method Choose a pyrex or metal plate (shaped like a 1 inch deep cake tin) that will fit into your steamer.听 Chop the black beans and incorporate the garlic and ginger into this mix.听 Put the diced pork rashers into this plate.听 Add the chopped black beans, ginger and garlic mix.听 Add the cornflour, soy sauce, sugar, sesame oil, water and season with salt and crushed black pepper.听 Mix to allow the seasoning to coat the pork.听 Sprinkle chopped chillies on top. Leave 30 minutes in the fridge to allow marinade to soak in.听 Prepare your steamer.听 When the water is boiling, put the pork into the steamer and steam for 20 - 25 mintues.听 Served garnished with fresh coriander leaves Back to the recipe page |
