Pineapple Kebabs With AngosturaIngredientsServes 4 to 61 large pineapple 6 tbsp brown sugar 2 tbsp Angostura bitters PreparationSoak wooden kebab skewars in cold water for at least 20 minutesCut the pineapple into chunks, discarding skin and woody central cores. Place in a bowl and add sugar and Angostura. Toss to mix and leave for about 10 minutes until the sugar melts. Method1) Thread pineapple chunks onto wooden kebab sticks, smear with thesugar mixture and grill, turning every so often, until the sugar is bubbling and carmelized. 2) Serve hot or cold with vanilla ice cream and the juices dribbled over the top. ================================================== Spicey Pineapple StarterServe this as a starter with cocktail sticks to skewer them.Ingredientsfresh pineapplefinely chopped chilli sea salt PreparationCut fresh pineapple into small pieces about 1 inch square.Sprinkle with finely chopped fresh chilli and good sea salt to taste.
