Radicchio is the slightly pinkish or reddish coloured plant that you often find in your mixed salad bag. The taste is slightly bitter but it's highly prized by the Italians of the Veneto region where it's been cultivated since the 16th century. What a lot of Italians might not tell you though is that the stuff we get in our salad bags is only the standard variety. Any discerning Italian gourmet will instead opt for a kind known as "trevisse".
