The story of cheddar can be traced right back to the Romans, who introduced hard cheeses to Britain. But it wasn't till the 16th century that this cow's milk cheese made in the Mendip Hills became known as Cheddar, after the nearby gorge. It's been copied around the World, but real English cheddar still retains a certain magic.

The food writer Juliet Harbutt told Anna MacNamee why she considers cheddar - the most charming of cheeses.
