The collapse of the Soviet Union saw the end of the state food monopoly and the start of a fledgling food industry - including restaurants, restaurant reviewers, markets stocking imported products, cook books and cookery writers.

Lydia Lagutina is the Russian Delia Smith. She writes a cookery column and has published more than 80 books.
In a country where most people still can't afford to eat out, her cookbooks are relied on by millions.
Irris Makler went to see Lydia at her home in Rostov on Don, where she runs an emergency recipe hotline.
