Letitia gets a delicious recipe for chickpea and coriander burgers (FULL RECIPE BELOW)
RECIPE
Ingredients:
Chick pea, coriander burgers with chilli and lime.
You will need:
2 cans chickpeas
3 medium potatoes, peeled, boiled and mashed
2 tablespoons of gram flour (it's better to use gram flour, but 1 tablespoon of cornflower will do)
Juice of 1 lime
1 red chilli, de seeded and diced
2 white onions, diced
1 vegetable stock cube
1 teaspoon garlic granules
Handful of freshly chopped coriander
(Black pepper to taste)
Instructions:
Drain the chickpeas. Add the diced onion, chilli, and coriander and blitz together in a food processor.
Scrape down the sides and blitz one last time.
Transfer to a mixing bowl.
Add the mashed potato and gram flour and all remaining seasoning.
Stir really well, and combine all ingredients.
With floured hands, form into smallish burger sized patties and place on a tray. Chill for 1 hour.
Heat 3 tablespoons of olive oil in a non stick pan, and shallow fry burgers over a medium heat for about 5 or 6 mins per side or until golden brown.
Serve on a nice burger bun with salad and mayo.
