To make an 8" round cake.

For the strawberry coulis

• 100g/1lb 2oz strawberries, hulled and chopped
• 路 50g/1lb 2oz caster sugar
• 陆 lemon

For the sponge cake

• 250g/9oz butter, at room temperature, plus extra for greasing
• 250g/9oz caster sugar
• pinch of salt
• 路 5 duck eggs
• 250g/9oz self-raising flour , plus extra for dusting

For the strawberry decorations

• 100g/3陆oz sugar
• strawberries, stemmed left on
• icing sugar , for dusting

For Chantilly Cream

• 200ml whipping Cream
• 1tsp Vanilla extract
• 50g Icing Sugar

Chocolate Decoration

• Tempered Chocolate of your choice
• Silicone or Parchment paper
• Piping bag
