Chocolate French Toast for Mum!
This recipe needs a bit of forward planning, you need to soak the bread in egg mixture overnight.
2 Slices dry wholemeal bread
2 eggs beaten
1 dessertspoon cocoa powder
1 dessertspoon icing sugar
50g dark chocolate grated
50g frozen raspberries
1 teaspoon of icing sugar
For the Chocolate sauce:
100g dark chocolate
30g butter
First of all, cut the bread into triangles or cut a heart shape out of the middle. To the beaten eggs, add the cocoa powder and icing sugar and mix well. Pour this mixture into a large pan or dish and put the bread into the mixture,. turn it over so it is coated on both sides, Cover with cling film and soak overnight.
In the morning take your raspberries from the freezer and break them up, mix with the icing sugar. Take your soaked bread out of the fridge, Heat a frying pan, with a dash of oil and a pinch of butter. When it is sizzling, add the soaked bread, turn to a medium heat and cook for a minute or so on each side until it is quite crispy. Remove from the heat and keep warm by putting a plate on top of the frying pan.
To make the sauce take a small saucepan, put it onto a low heat, add the chocolate and butter and mix really well, you can add a dash of cream for extra richness.
Take the cooked bread (there is enough for two portions here, one for your Mum, one for you) , toss it in the grated chocolate, place on the warm plate with some of the raspberries, pour over some chocolate sauce and maybe a dash of cream. Serve with a nice hot cup of tea or coffee and a big smile. Happy Mother's Day!
