MUSCOVADO HEAVEN by Prue Leith CBE

What it is, is jam, yogurt, cream and sugar. And it takes two minutes, max, to make.

Put some compote, jam, fruit or what have you in a shallow dish. Stir equal parts double cream and plain yogurt together until gloopy-thick but not set.

Pour over the fruit. Sprinkle really heavily with dark muscovado sugar (no other sugar will do!) and put in the fridge for half an hour or so. The sugar will dissolve into a dark lake. If you like a bit of crunch sprinkle a little more sugar on top before serving. Or serve with a thin sweet biscuit.

Looks good in individual cocktail glasses too!
