Food Friday recipe - Goats Cheese, Sundried Tomato & Basil muffins

Ingredients:

Dry Mix:
* 350g plain flour
* 1 1/2 teaspoons baking powder
* 1 teaspoon dried thyme
* Pinch salt
* black pepper

Wet Mix:
* 3 large eggs, beaten
* 250ml milk
* 125g goats cheese, roughly chopped/crumbled
* 75g Feta cheese, chopped into chunks
* 125g sun dried tomatoes, chopped
* 25g fresh basil, chopped
* 1 teaspoon dried garlic granules (optional)

Method:

1: Preheat your oven to 200C and place 10 muffin cases into a muffin tray.
2: In a large bowl combine the dry mix ingredients and mix well. In a separate bowl combine the wet mix ingredients and mix well.
3: Carefully fold the wet mix into the dry mix, fold in very gently just until the flour is combined otherwise you will get a very hard muffin, then spoon into the muffin cases and bake for about 25 minutes or until the tops are golden brown and the centres are cooked.
