"I rang yesterday," says Iris in Ballyclare. "And you wanted to know about my boiled cake."

"I never heard of a boiled cake!" Sean says.

"You put in some margarine," says Iris.

"You don't say how much margarine? A lump of margarine."

"A cup of sugar," says Iris.

"Eugh! A cup of sugar?"

"And a cup of cold tea. And one or two cups of dried fruit. You put it all into a saucepan. You put it all in and you simmer all that for twenty minutes.

"It's getting complicated from now on in."

"Then you turn it off and leave it to cool."

"OK..."

"Then you add a well-beaten egg, with mixed spice..."

"I'm losing it now. I don't know where you get mixed spice."

"And then you add flour," says Iris.

"You don't tell me how much flour!"

"And baking soda."

"Would that be a spoonful of baking soda?" Sean says.

"You put it all into a tin," Iris says, "And into the oven for an hour. And that's it."

"I enjoy you! That's like a week's work."

"It's really easy to make," Iris says. "If you want the recipe I'll send it in to you and you can give it a go."

"I'll look forward to that. Thank you Iris."
