The London and south east England chefs - Matt Gillan, Lee Westcott and Marcus Wareing's protege Mark Froydenlund - go head to head with their fish courses. Lee is hoping his modern plate of mackerel and passion fruit will outclass Matt and Mark's more traditionally inspired salmon dishes. But victory is by no means guaranteed, as Lee's talented rivals are pushing hard to plate up perfection.
