Sticky Apple Glazed Pork Griskins & Kohlrabi, Apple and Peanut Slaw

Sticky apple glazed pork griskins

Ingredients & Method:

  • 600g pork griskins

  • 1 tablespoon cooking oil

  • 100ml chicken stock

  • 1 cooking apple

  • 50g castor sugar

  • 1 tablespoon water

  • 50ml cider vinegar

  • 2 tablespoons honey

  • 50ml soy sauce

Heat a large frying pan with the oil until very hot.

Season the griskins with salt and add to the pan.

Seal off until golden on both sides. Add the stock and simmer for 10 minutes.

Peel, core and chop the apple and cook with the sugar and water until soft.

Blend and then mix with the vinegar, honey and soy.

When the stock has nearly evaporated add the apple mixture and cook to glaze.

Kohlrabi, apple and peanut slaw

  • 1 small purple or green kohlrabi

  • 1 red eating apple

  • 1 tablespoon cider vinegar

  • 1 red onion

  • 2 tablespoons mayonnaise

  • 100ml sour cream

  • 50g coarsely chopped peanuts

  • 1 teaspoon wholegrain mustard

Coarsely grate the kohlrabi and apple and mix with the vinegar.

Peel, half and finely slice the onion and mix into the kohlrabi and apple with the sour cream, mayonnaise, peanuts and mustard.

Check seasoning and serve with the griskins.
