Pancake Day with Briony
Ingredients - Makes 12

- 150ml plain flour
- 1/2 tsp salt
- 2 large eggs
- 250ml milk
- 1 tbsp rapeseed oil
Method
- Mix all the ingredients in a bowl and whisk for a few minutes until completely smooth (use a stick blender if you have one).
- Transfer to a jug and set aside to rest for 30 minutes. Heat a frying pan with a teaspoon of butter until melted.
- Stir the batter then pour a thin layer into the pan and tilt until the base is completely covered. Leave to cook for a few minutes until the edges start to lift off the pan.
- Use a fish slice to flip the pancake then cook for a further minute until both sides are browned. Repeat with the rest of the batter.
