Summer squashes are different to winter pumpkins and ornamental gourds, the fruit is usually soft-skinned, especially when young, and may be eaten raw or cooked. 'Tivoli' is a bush variety with almost white fruit. The flesh is sweet and crunchy and when boiled it breaks up to resemble spaghetti. It can be stored until December or January, and is delicious in stir fry and salads.
