Low-fat vanilla cake

Mich's 'skinnylicious' vanilla cake is fat-free and dairy-free, yet doesn't compromise on flavour. This cake should be eaten on the day it is made.

Equipment: you will need a sugar thermometer and a blowtorch

Ingredients

For the berry compote

  • 400g/14oz fresh or frozen berries, such as strawberries, raspberries, blackcurrants or blackberries
  • 100g/3½oz golden caster sugar
  • 1 orange, juice and finely grated zest
