This is a super simple romesco sauce, loaded with peppers and paprika that works beautifully in this . It also works well as a spread or dip.

Ingredients

  • olive oil: 1 tbsp olive oil
  • white bread: 1 slice stale white bread, torn into rough 2cm/1in pieces
  • almonds: 50²µ/1¾´Ç³ú almonds
  • garlic: 1 garlic clove, sliced
  • peppers: 100g/3½oz roasted red peppers, from a jar, drained
  • smoked paprika: ½ tbsp smoked paprika
  • sherry vinegar: 2¬3 tbsp sherry vinegar
  • olive oil: 100ml/3½fl oz extra virgin olive oil
  • salt: pinch salt

Method

  1. Heat the olive oil in a frying pan and fry bread pieces, almonds, and garlic until golden.

  2. Add to a blender with the roasted red peppers, paprika, sherry vinegar, olive oil and salt and blend until smooth.

  3. Serve as a dip, spread onto sandwiches or use as an ingredient in Philli's .
