Easy chocolate loaf cake
Friends coming round for coffee or afternoon tea? Or just having a day when only chocolate cake will do? This five-ingredient chocolate loaf cake is the answer.
Ingredients
- 175ml/6fl oz sunflower oil
- 4 free-range eggs, lightly beaten
- 175g/6oz soft light brown sugar
- 200g/7oz self-raising flour
- 75²µ/2¾´Ç³ú cocoa powder
- pinch salt
- 4 tbsp boiling water
Method
Preheat the oven to 170C/150C Fan/Gas 3½. Grease a 900g/2lb loaf tin and line with a long strip of greased baking paper.
Whisk the sunflower oil with the eggs and sugar for 2–3 minutes until pale.
Sift the flour, cocoa and salt over the mixture, mix gently to just combine and then beat thoroughly. Add the boiling water and mix until smooth.
Scoop the mixture into the prepared tin, spread level and bake for 45–50 minutes until the cake is springy, well risen and a wooden skewer inserted into the middle of the cake comes out clean.
Leave to cool in the tin for 3–4 minutes and then carefully remove from the tin and leave to cool on a wire rack.
