Bacon, cheese and potato-topped pie

A homely cheese pie made with bacon, leeks, cheddar and red Leicester and topped with buttery, garlicky rosemary potato slices. Make sure you soak the potatoes in a bowl of water for at least an hour to remove excess starch.

Ingredients

For the topping

  • 1 rosemary sprig, leaves only, choppedÌý
  • 1 garlic clove, finely chopped
  • 50ml/2fl oz olive oilÌý
  • 50²µ/1¾´Ç³ú butter, melted
  • 4–5 potatoes peeled and thinly sliced, soaked in a bowl of water for at least an hour
  • salt and freshly ground black pepper

To serve

  • 120²µ/4¼´Ç³ú Parmesan, grated Ìý
  • green salad leaves
