Ingredients

  • bulgur wheat: 150²µ/5½´Ç³ú bulgur wheat
  • 300ml/10fl oz just-boiled water
  • gouda: 120²µ/4¼´Ç³ú gouda, cut into cubes
  • apples: 3 green apples, cored and diced
  • parsley: large bunch fresh flatleaf parsley, about 60–80g/2¼–2¾oz, roughly chopped
  • French dressing: 2 tbsp French dressing
  • black pepper: salt and freshly ground black pepper

Method

  1. Place the bulgur wheat in a large heatproof bowl and pour over the hot water. Cover and set aside for 25–30 minutes until the grains are tender and the water has been absorbed.

  2. Meanwhile, place the cheese, apple and parsley in a large bowl.

  3. Fluff up the bulgur wheat with a fork. Add the bulgur wheat and dressing to the cheese mixture. Mix together, season with salt and pepper and serve.

Try adding some chopped nuts, such as hazelnuts or pecans, if you have any to hand.
