Omari's vegan banana pudding cups
Did you see Omari's brilliant banana pudding cups, how amazing did they look? Here's everything you need to taste it for yourself!
- 250ml (1 cup) of oat milk
- 250ml (1 cup) of condensed coconut milk
- 1 teaspoon of nutmeg
- 3 bananas
- 1 tablespoon of cornstarch
- 1 pack of oat biscuits, crushed
- Chilled coconut milk
- 1 teaspoon of vanilla extract
- 1 tablespoon of maple syrup
- 1 cup of powdered sugar
How to make vegan banana pudding cups
Step 1
Add your oat milk, vegan coconut condensed milk, nutmeg and a frozen banana to a blender and blend it up until it's smooth. Make sure you get a grown up when using a blender.
Step 2
Grab a grown up to help you with this step. Pour your blended mix into a saucepan, add cornstarch and water then whisk over heat until it is thickened. The consistency should be similar to custard.
Step 3
Leave this mixture to cool slightly as you crush up your biscuits. These biscuits will be the base for your pudding cup! Chop some more banana to go on top.
Step 4
Make the vegan whipped cream! Put your chilled coconut milk, vanilla extract, maple syrup and powdered sugar in a mixing bowl and whisk them together for around 4 minutes.
Step 5
Now it's time to layer it all together! Take your cup and spoon in some crushed biscuit, then add in your pudding mixture and top it off with some slices of ripe banana.
Step 6
Leave your banana pudding cups to set in the fridge for around 4 hours, then enjoy!
