Who'll be the next Doctor Who? Behind the scenes at the Christmas Special

The One Show sent Jon Culshaw to Gallifrey, via Cardiff, in our exclusive behind the scenes look at the Doctor Who Christmas Special.

David Tennant will be passing on theÌýsonic screwdriver to a new Doctor next year. But who will play the role?

I don't know. But our resident Doctor Who fan, Researcher Dan from the web team, reckons he does. He's been looking at the bookies' picks and giving me his verdict. Dan says:

"David Morrissey (You'll know him from Blackpool andÌýThe Other Boleyn girl) is hotly tipped at 11/10 and is already appearing as the mysterious 'other Doctor' in the Christmas special, but this could work against him.

"Chiwetel Ejiofor - currently at 7/1 has the sci-fi background, having appeared in cult hit Serenity. His Shakespearian backgroundÌýcould add some gravitas to the Doctor.

"James Nesbitt (Murphy's Law, Cold Feet) is coming in at 12/1 but James' name has been on the radar for playing the Doctor since before Christopher Eccleston and he never seems to get further than a rumour.

"My favourite to get the job is Paterson Joseph (Survivors, Peep Show) after it was inadvertently leaked during an interview on ³ÉÈË¿ìÊÖ News a few weeks ago that he may be up for the role. The rumours are so strong around him that many bookies have stopped taking bets."

Just in case you're wondering, our very own Adrian Chiles comes in at 200/1.

Sprouts - can they ever taste good?

Opinion seems pretty evenly split in our office. Adrian Chiles is a fan of Brussels sprouts. Runner Charlie hates 'em. Director Neil was more thoughtful. He wasn't so keen when young, but he now says he savours them - as his taste buds have matured.

If you're not keen on sprouts, Michael Mosley may know why. In tonight's film, Michael told us about supertasters. Supertasters' tongues have far more taste buds than average giving them a heightened sense of bitterness, sweetness, salty and sour. If you're a supertaster (one in five of us are), sprouts can taste very bitter.

So, you now have an excuse for not clearing your plate at Christmas.

Gratin of Brussels sprouts with lardons, cream and almonds by Sophie Grigson.


Serves 8 - cooking time 30 mins to 1 hour.

Ingredients
900g/2lb Brussels sprouts, trimmedSprout Gratin
20g/¾oz butter
4 tsp sunflower oil
150g/5oz bacon lardons (or rindless back bacon, cut into short fat strips)
20g/¾oz flaked almonds
400ml/14fl oz double cream
2½ tsp lemon juice
5½ tbsp fresh white breadcrumbs
4 tbsp freshly grated parmesan cheese
salt and freshly ground black pepper


Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the sprouts into a saucepan of simmering salted water and cook for 4-5 minutes, until almost, but not quite, cooked. Drain thoroughly, allow to cool slightly, then cut in half.
3. Place the butter and oil into a wide frying pan over a medium heat. Add the bacon lardons and almonds and sauté for 3-4 minutes, until lightly browned.
4. Add the sprouts and sauté for a further 2-3 minutes, stirring constantly.
5. Add the cream and bring the mixture to the boil. Boil for 2-4 minutes, until the cream has reduced to a rich sauce. Season to taste with salt and freshly ground black pepper.
6. Remove from the heat, add the lemon juice and spoon into an ovenproof gratin dish.
7. Mix the breadcrumbs and parmesan cheese together in a bowl, then sprinkle evenly over the top of the sprout mixture.
8. Place into the oven and bake for 18-20 minutes, until the top is golden-brown and the cream visibly boiling.
9. Remove from the oven and serve in the gratin dish (when the dish has cooled slightly).

It's a British tradition to eat meat at the Christmas meal.

Roast turkey, chicken, lamb and beef. Chipolata sausages wrapped in bacon. Duck, goose, pheasant and... turkey sandwiches, turkey sandwiches, turkey curry and more turkey sandwiches.

Justin at a farmBut there is an alternative. In the latest One Minute on The One Show, Justin Kerswell from vegetarian organistation Viva, tried to convince us to cut out the meat this Christmas.

He thinks that animals being killed for our dinners is not very Christmassy. He says that the average person eats over 11,000 animals in their lifetime - lives that could be saved if we replaced the meat with veg.

He also made the case that vegetarianism is good for the planet and better for your health. He says that vegetarians have lower rates of obesity, heart disease, high blood pressure and gallstones.

And if that's not enough, he also wants us to know that there are now lots of tasty alternatives to meat on the market.

The National Farmer's Union reply to Justin's film is: "Food is for enjoying, especially at this festive time of year, and the NFU would encourage shoppers to look out for the Red Tractor logo, to be reassured the food they are buying is British, has been reared to high standards of animal health and welfare and is traceable back to the farm gate."

How do you get Poinsettias red again?

Poinsettias are fantastically popular at this time of year but their vibrancy doesn't last that long and they'll soon wilt and die.


If you want to experience the joy of seeing those colours again next year we have a challenge for you.


Our friends at ³ÉÈË¿ìÊÖ Gardening believe that it's almost impossible to grow their beautifulÌýcolouration again.


But we have faith that you can prove them wrong so we've scoured the internet for some top tips.


1. Re-fertilise your Poinsettia every couple of weeks until the plant loses it's coloured leaves.
2. Once the colour has faded, keep it in a cool but sunny place and don't water until the soil dries out and the stems begin to shrivel.
3. When May comes around you should trim the stems back to around 10cm.
4. Re-pot if needed.
5. Begin watering whenever the soil begins to dry. Be careful not to water too much until new shoots start to grow.
6. Once the new shoots reach about 2cm long re-fertilise your Poinsettia.
7. As Poinsettias are native to Mexico it needs careful light control to trick it into blooming again. From September you should cover your plant with a bag or cardboard box from early evening until the next morning so that the plant is in darkness for 14 hours.
8. Do this every day for about 8 weeks (until mid-November) and then treat the plant as normal. With a bit of luck your Poinsettia should be gaining their colour again by Christmas.

Christine Walkden attended the annual competition run by the British Christmas Tree Growers Association, which showcases the very best Christmas trees in the UK.


While there, she picked up some top tips on keeping your cut Christmas tree in peak condition over the festive season. They are:


1. When the tree reaches your home remove one inch of the base of the trunk.

2. Stand the tree in a bucket of cold water for 24 hours before you bring it into the house.

3. Once inside the house, place the tree in a Christmas tree stand, and keep it topped up with water.


Of course, for a truly sustainable Christmas tree you could buy one which still has its roots which can be re-planted each year.

What has Hawking done for science?

You get to meet all sorts of interesting people working on the One Show but it is still pretty rare to meet a bona fide genius. Professor Stephen Hawking is most definitely that. He is one of the country's pre-eminent theoretical physicists and the author one of the best-selling science books ever - A Brief History of Time.

Justin Rowlatt talking to Stephen HawkingThat is extraordinary enough, but Stephen Hawking has achieved all this despite being profoundly disabled by motor neurone disease. He now only has very limited movement of his face. He communicates using a sensor on his cheek which allows him to select letters on a computer. But that doesn't stop his personality and sense of humour coming across.

As we set up the cameras for the interview I mentioned my mother's name and that she had studied Physics at Cambridge around the time that he was there. His cheek began to twitch. It was clear that he had something to say to me. But it takes Stephen quite a long time to express himself as he constructs words letter by letter.

As I waited to hear what he had to say I couldn't help but speculate. My mother had not mentioned knowing him. Was there a reason for that, I wondered....

Suddenly his computer voice box spoke: "I was not a good student. I did not spend much time at college, I was too busy enjoying myself."
